With transport limited to horse drawn vehicles and roads restrictive, properties traditionally had a vegetable garden to supply the kitchen with fresh seasonal produce to feed the family, workers and an endless array of travellers. The kitchen garden was tended daily and the most important garden to the homestead community.
At Braeside we have endevoured to create a Potager, or formal vegetable garden. The Garden will be a productive hive of activity supplying guests with seasonal herbs and vegetables in an attractive and practical area. The centrepiece of this garden is a custom built avairy and dovecote' housing elegant and quirky white fantail pigeons. Pigeons were kept throughout Europe as a source of food, ours are pets and enjoy the peaceful environment within the hedged walls of the potager.  |
